Poached cherries
Ingredients:
220g (1 cup) caster sugar
2 cinnamon quills, crumbled
1 vanilla bean, seeds scraped
600g cherries, halved, pitted
Juice of 1/2 lemon
Method:
1.Place 250ml (1 cup) water, sugar, cinnamon and vanilla bean and seeds in a saucepan and stir over medium heat until sugar dissolves and mixture boils, then boil for 5 minutes. Add cherries and lemon juice and cook for another 2 minutes. Cool, then refrigerate until chilled or for up to 1 day.
Notes Cherries can be made 1 day ahead.
