Mango and strawberry ice
Ingredients: (serves 4)
2 fresh mangoes, diced
250g punnet strawberries, hulled
1 small banana, peeled
1/4 cup apple juice
200g tub reduced-fat passionfruit yoghurt
almond bread, to serve
Method:
1.Place mango onto a lined baking tray. Cover and place into freezer for 3 hours, or until frozen.
2.Process or blend frozen mangoes, half the strawberries, banana, juice and yoghurt until combined.
3.Pour into glasses. Slice remaining strawberries and place on top. Serve with almond bread.
Notes You can replace fresh mangoes with 2 x 425g cans mango, drained.
Nutrition analysis includes 2 small pieces of almond bread.
For this dessert to be low-GI, the banana should not be over-ripe.
Hint: Using frozen mango gives the dessert a velvety texture. Alternatively, add 1 cup of ice to blender and don't freeze mango. This will increase the quantity by 1 cup.
